2008 First Place Guacamole Contest Recipe

12 Homegrown Hass Avocados/Roughly Mashed
3 Medium Tomatoes/Seeded & Chopped
1 Medium Sweet Onion/Chopped
5 Green Onions/Chopped
7 Large Anaheim Chiles/Roughly Chopped
1 ½ Habanero Chiles/Finely Diced
1/3 Cup Italian Parsley or Cilantro/Roughly Chopped
½ Teaspoon Green Habanero Pepper Pulp Hot Sauce
1 ½ Teaspoons Morton Nature’s Seasons Seasoning Blend
1 Teaspoon Hawaiian Sea Salt
½ Teaspoon White Pepper
2 Limes/Juiced
2 Lemons/Juiced
2 Hass Avocados/Chunked
Mix all ingredients except 2 chunked Hass avocados in a bowl. Taste. Let sit in the frig. for 2 hrs. Stir in 2 Chunked Hass avocados right before serving with your favorite
tortilla chips.

Ten Hass Avocados
Two tsp. Fresh Lemon Juice
One Medium Yellow Onion (Diced)
One Bunch Cilantro
Two tsp. Hawaiian Sea Salt
Six Roasted & Peeled Jalapenos
Two Roasted Javenero Chilies
Three Medium Cooked Organic Tomatoes
One Half tsp. Garlic
In a large molcajete with tejolote in hand take jalapeno and javanero chilies grind adding onion, Hawaiian sea salt, cilantro, garlic and tomatoes. Take avocados, cut in half, twist gently and pull apart removing pits. Cube avocado flesh in skin and gently turn skin inside out and scoop into molajete. Repeat with all avocados. Take in the aroma and dynamic colors and textures as you enjoy the evolution of an Aztec tradition.

Mexi Fest Guacamole

A blend of fresh yellow chile and a mixture of fresh tomatoes, yellow (sweet) onion, cilantro with a splash of lemon juice combined with Haas avocado.
Dice Approx. 10 Yellow Chiles Finely
Dice Approx. 8 Tomatoes and 3 Sweet Onions
Finely Cut Cilantro
Mix All Together & Add 1/3 Cup Fresh Lemon Juice
Fold In Approx. 6-8 Diced Avocados
Makes Approx. 1 Quart

5 Avocados
1 Large tomato, diced
½ Large onion, Diced
½ Can diced chillies
½ Bunch cilantro, chopped
Serano chilli sauce to taste
Garlic salt to taste
2 Tbsp lemon juice
Mix and season to taste.

“Traditional” Mix Guacamole

6 large avocados
½ tsp oregano
4 cloves garlic
1 cup diced red onion
1 cup diced green onion
2 cups cilantro
2-3 tomatoes, fresh
2 chile de arbol, fresh
2 serrano peppers, fresh
1 yellow chile, fresh
1 jalepeno chile, fresh
1. Boil all chiles in water or roast (can be mashed on stone later).
2. Boil or toast tomatoes.
3. Blend in blender chiles, tomatoes, oregano, cilantro, garlic – just until grated up. Add salt to taste.
4. Incorporate diced onions (green & red) and stir.
5. Add cut up avocado to liking of thickness & richness.

1 tsp. Minced Garlic
1 oz. Goat Cheese
1 Roma Tomatoe
Lime Juice

10 Kermoyan avocados (15 Hass can be substituted)
24 oz. Pace Picante salsa, Hot
6 roma tomatoes, diced
1 small white onion, finely diced
2 bunches cilantro, finely chopped
6 serrano peppers, finely diced (including seeds)
1 tsp salt (to taste)
juice of 1 lime
black pepper to taste
Combine avocados, salsa, serranos, onion, lime juice and salt; combine ingredients together. Add cilantro, tomatoes and black pepper; stir gently.

7 Kermoyan Avocados (Hass can be substituted)
16 oz. Pace Chunky Salsa, Hot
5 Roma Tomatoes, Diced
1 Small White Onion, Finely Diced
1 ½ Bunch Cilantro, Finely Chopped
5 Cerrano Peppers, Finely Diced (Including Seeds)
¾ - 1 tsp. Salt (to Taste)
Juice of 2 Limes
Dash of Black Pepper
Combine avocados, salsa, cerranos, onion, lime juice and salt; mash ingredients together. Add cilantro, tomatoes and black pepper; stir.

Antipasto Guacamole
4 Avocados
1 can Artichoke Hearts
7 oz. Jar Roasted Red Peppers
cup Greek Olives
2 Tbsp. Chopped Onion
I Tbsp. Chopped Garlic
Cup Tomatoes
Cup Pepperocinis
Salt, Pepper, Lemon Juice to taste

In a bowl mash the avocados. Chop remaining ingredients and mix with avocados. Season to taste.
